The agency specifically cites *Bacillus cereus*, a bacterium commonly found in rice, which produces a toxin that isn’t destroyed by heat. This toxin can cause vomiting and diarrhea, symptoms typically appearing within 30 minutes to 6 hours after consumption. The FDA recommends promptly refrigerating leftover rice and noodles within two hours, and consuming them within 24 hours. Thoroughly reheating food only kills the bacteria, not the pre-formed toxin. Individuals, especially vulnerable populations, should exercise caution when consuming reheated rice dishes and prioritize fresh preparation whenever possible to avoid foodborne illness.
